Cinco de Mayo at Paradiso 37, Disney Springs!

What better way to celebrate Cinco de Mayo (or any day) than with a trip to Paradiso 37 located at The Landing in Disney Springs. I'm not sure how it slipped past me all these years, but I have never had the pleasure of dining there before. Today, I did a walk-up for a late lunch. So, keep this location in mind for any last minute dining changes!
First off, the service was excellent (thank you Tim for answering all of my questions and making great recommendations. Be sure to ask for Tim and tell him the Princess sent you). 
The food was delicious and fresh. It was not heavy and covered in gloppy sauces like one may find at some chain restaurants that serve Mexican food. In the Florida heat, this is a welcome surprise! It's a definite hidden gem and I recommend giving it a try on your next trip to Disney Springs.

The menu has a wide variety of options. Quesadillas, burritos, salmon, salads, and a selection of steaks and burgers. There's also a full bar and a wide selection of specialty cocktails and margaritas.  This location also stocks a supply of 75 different tequilas on a gorgeous bar!

Souvenir margarita glasses are available for an additional charge when ordering the P37 Swirl, sangria swirl margarita. 

On the street outside of the restaurant, "Bowl Margaritas" are available. Our server informed us that they are the equivalent of four (yes, 4) margaritas. (Pay attention Florida locals!) They are $30, but you can return with your souvenir cup and get refills for $18 for the life of the cup! 

Prickly Pear Fruit Margarita ($13.00). Don Julio Silver Tequila, prickly pear syrup, fresh lime juice and sour mix.

This was very pink and very sweet. What's not to love? The squeeze of lime helped balance the sweet and it paired well with all of the food without overpowering anything.

Aqua Fresca ($3.50).  

Technically this is not an aqua fresca but it was billed as such. We requested a non-alcoholic sweet fruity drink and this arrived, custom made. It was a refreshing blend of juices and hit the spot on a hot day.

Baja Fish Taco ($18.99). Crispy Seasonal White Fish, Cabbage Slaw, Pico de Gallo, Cilantro Lime Crema, Tortilla Salad, Escabeche Vegetables.
The tacos were well-stuffed with large flaky pieces of very mild white fish. The slaw was creamy and sweet. The vegetables were pickled jalapeno, onions, and carrots. They packed a nice amount of heat but also lent a lot of crisp freshness. The tortilla salad was a blend of mixed greens with a light vinaigrette. The best part was the bits of roasted corn.

Grilled Chicken Burrito ($15.99). Flour Tortilla, Sauteed Seasonal Vegetables, P37 Cheese, Chipotle Mango BBQ Sauce, Cilantro Rice, P37 Beans.
100% recommend. The burrito was stuffed full of tender chunks of grilled chicken and tender vegetables (see, there's a carrot! a burrito!). 

The mango BBQ sauce was sweet and changed up the entire flavor of the dish from what you might initially expect, but in a very good way. The cilantro rice was full of fresh flavor and it was difficult to stop at just two bites. Again, highly recommend.

Our server also supplied a selection of condiments (hidden Mickey).

Churros ($7.99). Cinnamon and sugar dusted served with a chocolate and caramel dipping sauce.

This came recommended by our server who informed us that the sauces are made fresh and because of the special holiday (but do you really need a reason?), we shared an order. One word-YUM! Just to be clear, that's not chocolate syrup. 
That. Is. Liquid. Fudge. 
It's decadent and rich and I MAY have drank the extra straight from the little cup like a shot. Very unprincessy, but the closest way to describe it is "drinking chocolate."  So, bottoms up and don't waste a drop!

Paradiso 37 has a North, Central, and South American design in keeping with the food. The music also reflects this. The design is unique. There are multiple levels, indoor and outdoor seating, bar seating, bar height tables, low tables, bench seats, and booths. There are even gorgeous views of the Disney Springs waterfront. I recommend taking a little walk around while you wait for your food or after dining.

If you are looking for a place to enjoy some good food and a margarita for Cinco de Mayo tonight, stop in at Paradiso 37.  But, keep in mind that any day is a great day for good food and a margarita!

Something to note, for those who use Tables in Wonderland for a dining discount, Paradiso 37 does not add the automatic gratuity. I have never encountered that at any other TIW location. So, please be sure to tip your server!!
*Paradiso37 has seating inside and outside and on multiple levels. Handicapped seating is available. There are ramps (and I believe an elevator).
